Kentucky 74 Bourbon BBQ Chicken Tacos Recipe

Bourbon BBQ Chicken Tacos

Ingredients

  • 1 cup ketchup
  • 1 small red onion, finely chopped
  • 1/4 cup packed brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp maple syrup
  • 2 tbsp cider vinegar
  • 1 tbsp chopped fresh parsley
  • 2 garlic cloves, minced
  • 1/4 tsp pepper
  • 3 tbsp Kentucky 74, divided (use 4 tbsp for stronger bourbon flavor)
  • 1-1/2 pounds boneless skinless chicken breasts (chicken thighs work as well)

Salsa Ingredients

  • 2 cups fresh or thawed frozen corn
  • 1 cup chopped sweet red pepper
  • 1 cup chopped sweet red pepper
  • 2 medium limes, zest and juice
  • 1/8 tsp hot pepper sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 flour tortillas (8 inches) or lettuce wraps for less carbs
  • Minced cilantro, optional

Directions

  1. In a 3-qt. slow cooker, combine the first 9 ingredients and 2 tablespoons of bourbon. Add chicken; turn to coat. Cook and cover. Keep on low until the thermometer reads 165° - about 3-4 hours.
  2. While the chicken is cooking, prepare the salsa. Combine corn, red pepper, onion, lime zest and juice, hot sauce, salt and pepper in a bowl. Serve chicken in tortillas with salsa. If desired, top with cilantro.
  3. Take the chicken out; shred with 2 forks. Put the shredded chicken back into the slow cooker and stir in the remaining bourbon. Heat through. Build your taco and enjoy!
